Lemon Poppy Seed Cake with Vanilla Butter Glaze



Ingredients



Cake:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons poppy seeds
- 1/2 cup unsalted butter, softened
- 1 1/2 cups sugar
- 3 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk

Vanilla Butter Glaze:
- 2 egg yolks
- 2 tablespoons sugar
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).

2. Prepare the Baking Pan:
- Grease and lightly flour a 9x13-inch baking pan. Set aside.

3. Mix Dry Ingredients:
- In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and poppy seeds. Set aside.

4. Cream Butter and Sugar:
- In a large mixing bowl, cream together 1/2 cup of unsalted butter and 1 1/2 cups of sugar until light and fluffy.

5. Add Eggs and Flavorings:
- Beat in the eggs one at a time. Add the lemon zest, lemon juice, and vanilla extract, mixing thoroughly.

6. Combine Wet and Dry Mixtures:
- Gradually add the flour mixture to the butter mixture alternately with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.

9. Cool and Glaze:
- Allow the cake to cool for 10 minutes in the pan, then poke small holes across the surface with a fork.
- Pour the prepared glaze over the warm cake, spreading it evenly with a spatula.

- Let the cake cool completely before slicing and serving.
