Lemon Ricotta Baked Bites
Ingredients
- 1 cup ricotta cheese
- 1 lemon, zested and juiced
- 1 tablespoon honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- A pinch of salt
- 1/4 cup sugar
- Butter or non-stick spray for greasing the baking tray
Instructions
1. Preheat the Oven: Set your oven to 350°F (175°C) and allow it to preheat fully before you begin preparing the bites.
2. Prepare the Baking Tray: Lightly grease a baking tray or line with parchment paper to prevent the bites from sticking.
3. Mix Wet Ingredients:
- In a medium bowl, combine the ricotta cheese, lemon zest, lemon juice, and honey. Mix until smooth and combined.
- Add the egg and vanilla extract to the mixture. Whisk together until fully incorporated.
4. Combine Dry Ingredients:
- In a separate small bowl, sift together the flour, baking powder, salt, and sugar.
5. Blend Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing gently until a smooth batter forms. Be sure not to overmix to keep the bites light and airy.
6. Spoon the Batter:
- Using a tablespoon, scoop the batter onto the prepared baking tray, spacing each spoonful about an inch apart to allow for spreading.
7. Bake:
- Place the tray in the preheated oven and bake for approximately 15 minutes, or until the bites are golden brown around the edges and set in the center.
8. Cool:
- Remove from the oven and let them cool on the tray for a few minutes before transferring to a wire rack to cool completely.
