Lemon Ricotta Berry Cake
Ingredients
- 1 box (about 15.25 oz) white cake mix
- 1 cup ricotta cheese
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon lemon zest
- 1 cup fresh berries (such as raspberries and blueberries)
- 1 cup whipped cream (store-bought or homemade)
- 1/4 cup powdered sugar
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with cooking spray or butter.
2. Prepare the Cake Batter
In a large mixing bowl, combine the white cake mix, ricotta cheese, water, vegetable oil, eggs, and lemon zest. Using a hand mixer or stand mixer, beat the ingredients on medium speed for about 2 minutes until well combined and smooth.
3. Bake the Cake
Pour the cake batter into the prepared baking pan, spreading it evenly. Place the pan into the preheated oven and bake for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean.
4. Cool the Cake
Once baked, remove the cake from the oven. Allow it to cool on a wire rack for about 10 minutes in the pan, then carefully remove the cake from the pan and let it cool completely on the wire rack.
5. Prepare Berry Topping
While the cake is cooling, wash and pat dry your fresh berries. Set aside.
6. Assemble the Cake
Once the cake is completely cool, spread an even layer of whipped cream over the top of the cake. Arrange the fresh berries over the whipped cream, distributing them evenly for a colorful presentation.
7. Garnish and Serve
Lightly dust the top of the cake with powdered sugar. Slice and serve the cake, enjoying the refreshing blend of lemon, ricotta, and berries.
