Lemon Sage Linguine with Parmigiano Reggiano
Ingredients
- 12 ounces linguine pasta
- 4 tablespoons unsalted butter
- 10 fresh sage leaves
- 1 lemon (zest and juice)
- 1 cup grated Parmigiano Reggiano cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
1. Boil Pasta:
- Bring a large pot of salted water to a rolling boil over high heat.
- Add the linguine and cook until al dente, according to the package instructions (approximately 8-10 minutes).
- Reserve 1 cup of pasta cooking water and then drain the pasta.
2. Prepare Sage Butter:
- While the pasta cooks, heat a large skillet over medium heat.
- Add the butter and allow it to melt gently.
- Once melted, add the fresh sage leaves and sauté until they become crisp and the butter begins to brown slightly, about 3-4 minutes.
- Be cautious not to let the butter burn.
3. Combine Ingredients:
- Lower the heat and add the cooked linguine to the skillet, tossing it to coat in the sage butter.
- Gradually add the reserved pasta water, one tablespoon at a time, to loosen the mixture if necessary.
4. Add Flavorings:
- Sprinkle the lemon zest over the pasta and stir in the lemon juice.
- Add the grated Parmigiano Reggiano, tossing until the cheese melts and the sauce becomes creamy.
- Season with salt and black pepper to taste.
5. Serve:
- Divide the pasta among serving plates.
- Garnish with additional lemon zest and a sprinkle of Parmigiano Reggiano before serving.
- Serve immediately while warm.
