Lemon Yogurt Almond Cake with Citrus Glaze



Ingredients



For the Cake:

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup plain yogurt
- 1/2 cup Greek yogurt
- 1/4 cup olive oil
- 1 tablespoon lemon zest
- 1 teaspoon almond extract
- 1 tablespoon lemon juice

For the Citrus Glaze:

- 1 cup powdered sugar
- 2 tablespoons lemon marmalade
- 2 tablespoons Meyer lemon juice
- 1 teaspoon orange zest
- 1 teaspoon orange blossom water

For Topping:

- 1/4 cup pistachios, chopped
- 1/4 cup almonds, sliced
- 2 tablespoons shredded coconut
- 1/4 cup fresh berries

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line with parchment paper.

2. Prepare Dry Ingredients:
In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Set aside.

3. Mix Wet Ingredients:
In a large mixing bowl, beat 3/4 cup sugar and 2 large eggs until pale and fluffy, about 2 minutes. Add 1/2 cup plain yogurt, 1/2 cup Greek yogurt, 1/4 cup olive oil, 1 tablespoon lemon zest, 1 teaspoon almond extract, and 1 tablespoon lemon juice. Mix until well combined.

4. Combine Dry and Wet Ingredients:
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

5. Bake the Cake:
Pour the batter into the prepared cake pan. Smooth the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool the Cake:
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

7. Prepare the Citrus Glaze:
In a small bowl, whisk together 1 cup powdered sugar, 2 tablespoons lemon marmalade, 2 tablespoons Meyer lemon juice, 1 teaspoon orange zest, and 1 teaspoon orange blossom water until smooth.

8. Glaze the Cake:
Once the cake is completely cool, drizzle the citrus glaze over the top, allowing it to drip down the sides.

9. Add Toppings:
Sprinkle 1/4 cup chopped pistachios, 1/4 cup sliced almonds, 2 tablespoons shredded coconut, and 1/4 cup fresh berries on top of the glazed cake.
