Lemon Zest Vanilla Butter Cake
Ingredients
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 teaspoon pure vanilla extract
- 1 tablespoon lemon zest, freshly grated
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and dust with a light coating of flour. Set aside.
2. Cream Butter and Sugar:
In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 3 minutes on medium speed.
3. Add the Eggs:
One at a time, beat in the eggs, ensuring each is fully contained within the mixture before adding the next.
4. Incorporate Vanilla and Zest:
Stir in the pure vanilla extract and lemon zest, blending until just combined.
5. Add Flour Gradually:
Reduce mixer speed to low. Gradually add the all-purpose flour in small batches, mixing until just combined and a smooth batter is formed. Do not overmix.
6. Transfer to Cake Pan:
Pour the batter into the prepared cake pan. Use a spatula to evenly spread the batter.
7. Bake:
Place in the preheated oven and bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool and Serve:
Allow the cake to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before serving.
