Limoncello Almond Delight with Berried Ice Cream
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup slivered almonds
- 3 large egg whites
- 1/2 cup unsalted butter, melted and cooled
- 1 1/2 cups confectioners' sugar
- 2 tbsp Limoncello
- 1 tbsp Amaretto liqueur
- 1 cup whipped cream
- 1 pint vanilla ice cream
- 1 cup fresh berries (blueberries, raspberries, or strawberries recommended)
Instructions
1. Preheat Oven:
Set your oven to 350°F (175°C). Prepare a baking sheet lined with parchment paper.
2. Prepare Dry Ingredients:
In a medium bowl, sift together the flour and baking powder. Stir in the slivered almonds and set aside.
3. Mix Wet Ingredients:
In a large bowl, beat the egg whites until frothy. Gradually add the melted butter and continue to whisk until well combined. Incorporate the confectioners' sugar, limoncello, and amaretto to the mixture, stirring until smooth.
4. Combine Wet and Dry:
Gently fold the dry ingredient mixture into the wet ingredients, using a spatula. Mix until just combined.
5. Bake the Cake:
Pour the batter into a greased cake pan, spreading it evenly with a spatula. Place in the preheated oven and bake for approximately 25 minutes or until a toothpick inserted in the center comes out clean.
6. Cool and Prepare Toppings:
Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. While the cake cools, scoop the vanilla ice cream into balls and freeze again to keep them firm.
7. Serve:
Slice the cooled limoncello almond cake and serve with a scoop of vanilla ice cream on the side. Top with a generous dollop of whipped cream and a handful of fresh berries.
