Loaded Air Fryer Russet Potato Skins with Cheddar and Bacon
Ingredients
- 4 large Russet potatoes
- 2 tablespoons vegetable oil
- 1 teaspoon kosher salt
- 4 tablespoons butter, melted
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 6 strips bacon, cooked and crumbled
- 2 tablespoons fresh chives, finely chopped
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 cup Greek yogurt
- 3 green onions, sliced
- Aluminum foil
Instructions
1. Prepare the Potatoes
- Wash and dry the Russet potatoes thoroughly.
- Prick each potato several times with a fork to allow steam to escape.
2. Preheat Air Fryer
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
3. Bake the Potatoes
- Rub the potatoes with vegetable oil and sprinkle with kosher salt.
- Wrap each potato in aluminum foil.
- Place the wrapped potatoes in the air fryer basket.
- Cook at 400°F for about 35 minutes or until potatoes are fork-tender.
- Carefully remove from the air fryer and allow to cool slightly.
4. Prepare the Filling
- In a mixing bowl, combine sour cream, Greek yogurt, melted butter, chili powder, black pepper, half of the cheddar cheese, and half of the bacon.
5. Prepare the Skins
- Once cooled, cut each potato in half lengthwise.
- Scoop out most of the potato flesh, leaving a thin layer as the skin.
- Add the scooped-out potato flesh to the filling mixture and mix well.
6. Fill and Finish Baking
- Spoon the filling mixture back into the potato skins, heaping slightly.
- Top each skin with remaining cheddar cheese and bacon.
- Return the loaded skins to the air fryer.
- Cook at 400°F for an additional 5-7 minutes until the cheese is melted and bubbly.
7. Garnish and Serve
- Remove from the air fryer and sprinkle with fresh chives and sliced green onions.
- Serve warm and enjoy!
