Loaded Black Bean Nacho Delight
Ingredients
- 2 cups canned black beans, drained and rinsed
- 2 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 2 bay leaves
- 1 cup chicken broth or vegetable broth
- Salt, to taste
- 2 ripe avocados, diced
- 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/2 cup crumbled queso fresco or cotija cheese
- 1/4 cup sliced green onions
- 1/4 cup sliced black olives
- 4 cups tortilla chips
Instructions
1. Sauté Aromatics:
- In a large saucepan over medium heat, add a splash of olive oil.
- Add the chopped onion and minced garlic. Cook for about 5 minutes, until the onion is translucent and fragrant.
2. Simmer Beans:
- Stir in the chili powder, cumin, oregano, smoked paprika, and bay leaves.
- Add the black beans and chicken broth (or vegetable broth), and bring to a gentle simmer.
- Reduce the heat to low and allow to simmer uncovered for about 20 minutes, stirring occasionally. Remove bay leaves.
3. Prepare Avocado Topping:
- In a small bowl, combine the diced avocados and lime juice. Gently toss to coat and set aside.
4. Assemble Nachos:
- Spread the tortilla chips evenly on a large serving platter or tray.
- Evenly distribute the black bean mixture over the tortilla chips.
5. Add Toppings:
- Drizzle half of the sour cream and salsa over the bean-covered chips.
- Sprinkle over the crumbled queso fresco or cotija cheese, sliced green onions, and black olives.
6. Garnish and Serve:
- Spoon the avocado mixture on top of the nachos.
- Drizzle the remaining sour cream and salsa over the avocado.
- Garnish with fresh cilantro before serving.
