Luscious Herb-Infused Hollandaise Omelette
Ingredients
- 4 large eggs
- 2 egg yolks
- 2 tablespoons water
- 1 tablespoon lemon juice
- 1 tablespoon distilled vinegar
- 1 teaspoon Dijon mustard

Instructions

b. Place the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water.

e. Remove from heat and stir in chopped parsley and chives. Set aside.
2. Cook the Omelette:
a. In a medium skillet over medium heat, add a little oil to coat the pan.
b. Crack the eggs into a bowl, beat them well, and season with a pinch of salt.
c. Pour the beaten eggs into the hot skillet, tilting the pan to spread evenly.
d. Cook for about 3-4 minutes, or until the edges start to set but the center remains slightly soft.
3. Assemble the Dish:
a. Gently slide the omelette onto a warm plate.
b. Generously spoon the herb-infused hollandaise sauce over the omelette.
