Luscious Lemon Bars with a Buttery Crust
Ingredients
Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
Filling:
- 3 large eggs
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (zest of 2 lemons)
Instructions
1. Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan to prevent sticking.
2. Make the Crust
- In a medium bowl, combine 1 cup of flour, 1/2 cup softened butter, and 1/4 cup powdered sugar.
- Mix with a pastry blender or fork until the mixture forms coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking pan.
3. Bake the Crust
- Place the crust in the preheated oven and bake for about 15 minutes until it is lightly golden.
- Remove from the oven and let it cool slightly while you prepare the filling.
4. Prepare the Lemon Filling
- In a large bowl, whisk together 3 large eggs and 1 cup granulated sugar until smooth.
- Add 1/4 cup flour, 1/4 cup lemon juice, and 1 tablespoon lemon zest. Mix until combined and smooth.
5. Pour and Bake
- Pour the lemon filling over the partially baked crust, spreading it evenly.
- Return the pan to the oven and bake for an additional 20 minutes, or until the filling is set and slightly firm to the touch.
6. Cool and Serve
- Once baked, remove from the oven and allow the bars to cool completely in the pan on a wire rack.
- Once cooled, cut into squares and sift additional powdered sugar over the top as a garnish if desired.
