Luscious Mushroom and Cheese Risotto



Ingredients



- 2 cups mushrooms, sliced
- 2 cups chicken broth
- 2 cups vegetable broth
- 2 sprigs fresh thyme
- 1 bay leaf
- 2 tablespoons soy sauce
- 1 large onion, finely chopped
- 1 1/2 cups Arborio risotto rice
- 1/2 cup dry white wine
- 2 tablespoons mascarpone cheese
- 2 tablespoons cream cheese
- 1/2 cup Parmigiano-Reggiano cheese, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon mushroom powder
- 3 tablespoons olive oil
- 6 sage leaves

Instructions



1. Prepare the Broths
- Combine the chicken broth and vegetable broth in a saucepan.
- Add the fresh thyme and bay leaf.
- Heat over medium heat until warm but not boiling.
- Keep warm throughout the cooking process.

2. Sauté the Aromatics
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3–4 minutes.
- Stir in the mushroom slices and sauté until they release their moisture, about 5 minutes.

3. Toast the Rice
- Add the Arborio rice to the skillet with the onions and mushrooms.
- Stir continuously for 2 minutes until the rice is lightly toasted.

4. Deglaze with Wine
- Pour in the dry white wine.
- Stir until the wine is mostly absorbed.

5. Cook the Risotto
- Begin adding the warm broth mixture, 1/2 cup at a time.
- Stir frequently, allowing each addition to be absorbed before adding the next 1/2 cup.
- Continue this process until the rice is creamy and tender, about 18–20 minutes.

6. Finish with Cheese
- Stir in the soy sauce, mascarpone cheese, cream cheese, and Parmigiano-Reggiano cheese.
- Season with salt, black pepper, and mushroom powder.

7. Sauté the Sage Leaves
- In a small skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add the sage leaves and fry for 30 seconds until crispy.
- Remove and drain on paper towels.

8. Serve
- Divide the risotto among serving bowls.
- Garnish with crispy sage leaves.
