Luxurious Cauliflower Cream Soup

- 1 large head of cauliflower, chopped
- 2 tablespoons unsalted butter
- 1 large onion, finely chopped
- 4 cups vegetable stock
- 1 cup heavy cream
- Salt and black pepper to taste

Instructions



1. Prepare the Cauliflower
Start by washing and then chopping the cauliflower into small florets. This ensures even cooking.

2. Sauté the Onions
In a large saucepan, melt the butter over medium heat. Add the finely chopped onion. Cook until the onion becomes translucent, about 5 minutes.

3. Cook the Cauliflower
Add the cauliflower florets to the saucepan. Stir well to coat them with the buttery onions. Let them sauté for 3 minutes.

4. Add the Vegetable Stock
Pour the vegetable stock into the pan. Bring the mixture to a boil over high heat, then reduce the heat to low. Let it simmer for about 20 minutes, or until the cauliflower is tender.

5. Blend the Soup
Remove the saucepan from heat. Using a hand blender, puree the soup until smooth and creamy. Alternatively, you can carefully transfer the soup to a countertop blender and blend in batches.

6. Incorporate the Cream
Return the soup to low heat. Stir in the heavy cream and season with salt and black pepper to taste. Allow the soup to heat through without boiling for about 3 minutes.

7. Serve and Enjoy
Ladle the hot soup into bowls and garnish with freshly cracked pepper if desired.
