Luxurious Lemon Parmesan Spaghetti with Spinach and Bacon
Ingredients
- 8 oz spaghetti
- 4 large eggs
- 1 cup freshly grated Parmesan cheese
- 6 slices bacon, diced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup spring vegetables (e.g., asparagus, peas, or zucchini), chopped
- 2 cups baby spinach
- Zest of 1 lemon

Instructions
1. Cook the Spaghetti
- Boil a large pot of salted water. Add the spaghetti and cook until al dente, following the package instructions, approximately PT10M.
- Drain the spaghetti, reserving 1 cup of pasta water. Set aside.
2. Prepare the Bacon and Vegetables
- In a large skillet over medium heat, cook the diced bacon until crispy, approximately PT10M.
- Remove the bacon from the skillet and drain off excess fat, leaving about 1 tablespoon in the skillet for flavor.
- Add the minced garlic to the skillet and sauté for about PT1M until fragrant.
- Stir in the spring vegetables and sauté until tender-crisp, approximately PT5M.
- Add the baby spinach, cooking until wilted, approximately PT2M.
3. Create the Sauce
- In a medium bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese.
- Stir in the lemon zest and season generously with salt and freshly ground black pepper.
4. Combine Pasta and Sauce
- Return the cooked spaghetti to the skillet with the vegetables, along with the crispy bacon.
- Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, use reserved pasta water to reach desired consistency.
5. Serve and Enjoy
- Season with additional salt and black pepper to taste.
- Serve immediately, garnishing with additional Parmesan cheese and lemon zest if desired.
