Luxurious Mushroom & Spinach Breakfast Creamy Scramble
Ingredients
- 6 large eggs
- 2 tablespoons butter
- 1/4 cup crème fraîche
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons soy sauce
- 1/2 teaspoon MSG (optional)
- 1 cup baby portobello mushrooms, sliced
- 2 cups fresh spinach
- 1/4 cup Greek yogurt
- 1/4 cup sour cream
- 3 ounces cream cheese, softened
- 2 tablespoons chopped fresh chives
- 2 scallions, thinly sliced
Instructions
1. Prepare the Creamy Blend:
- In a medium bowl, combine the Greek yogurt, sour cream, and cream cheese. Mix until smooth. Set aside.
2. Cook the Eggs:
- In a separate large bowl, beat the eggs with crème fraîche, salt, and pepper until well blended.
3. Sauté Mushrooms & Spinach:
- Heat 1 tablespoon of butter in a nonstick skillet over medium heat.
- Add the sliced baby portobello mushrooms and sauté for about 3-4 minutes until tender.
- Stir in the fresh spinach and cook for an additional 2 minutes until wilted.
- Remove the mushroom-spinach mixture from the skillet and set aside.
4. Make the Scramble:
- In the same skillet, reduce the heat to low and add the remaining 1 tablespoon of butter.
- Pour the egg mixture into the skillet.
- Stir gently with a spatula, ensuring the mixture cooks slowly, about 8-10 minutes, until soft curds form.
5. Combine & Season:
- Stir the mushroom-spinach mixture back into the skillet with the scrambled eggs.
- Add the creamy blend, soy sauce, and MSG (if using).
- Stir over low heat for about 2 minutes until everything is well combined and heated through.
6. Finish and Serve:
- Divide the scramble onto plates.
- Garnish with chopped chives and sliced scallions.
- Serve immediately for a delectable breakfast experience.
