Luxurious Stove-Top Sweet Potato and Artichoke Salad



Ingredients



- 2 large sweet potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- 1/4 cup vinaigrette dressing
- 2 stalks celery, finely chopped
- 1 can (14 ounces) artichoke bottoms, drained and quartered
- 2 tablespoons capers, drained
- 1 cup grape tomatoes, halved
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for sautéing

Instructions



1. Prepare Sweet Potatoes:
- In a large pot, add enough water to submerge the sweet potatoes and bring to a boil.
- Add the diced sweet potatoes to the boiling water and cook for about PT15M (15 minutes) or until tender.
- Drain and set aside, allowing them to cool slightly.

2. Make the Dressing:
- In a small bowl, whisk together the mayonnaise, mustard, and vinaigrette dressing.
- Add the lemon juice, half of the lemon zest, and minced garlic. Stir until well combined. Set aside.

3. Prepare the Vegetables:
- In a large skillet, heat a tablespoon of olive oil over medium heat.
- Sauté the celery for about PT3M (3 minutes) or until slightly tender.
- Add the artichoke bottoms, capers, and grape tomatoes to the skillet and sauté for an additional PT5M (5 minutes) until the artichokes and tomatoes have warmed through.

4. Combine Ingredients:
- In a large serving bowl, gently mix the cooked sweet potatoes with the sautéed vegetables.
- Pour the dressing over the mixture and toss until all ingredients are evenly coated.

5. Season and Finish:
- Season the salad with salt and pepper to taste.
- Sprinkle the remaining lemon zest over the top for garnish.
- Serve warm or at room temperature.
