Mafalda Noodle Salad with Grilled Chicken and Herbed Dressing



Ingredients



- 8 oz Mafalda-style noodles
- 2 tbsp oil (for cooking)
- 1/2 cup mayonnaise
- 1 seasoning packet (e.g., Italian blend)
- 1/4 cup dill pickles, diced
- 1/4 cup red onion, finely chopped
- 4 oz salami, sliced into thin strips
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 2 cups arugula
- 1 cup grilled chicken, sliced
- 4 oz steak, cooked and sliced
- 1 can (15 oz) chickpeas, drained and rinsed

Instructions



1. Cook the Noodles
- Bring a large pot of water to a boil on the stove.
- Add a pinch of salt and the Mafalda-style noodles. Cook for approximately 8-10 minutes, or until al dente.
- Drain the noodles and rinse under cold water to stop cooking. Set aside.

2. Prepare the Herbed Dressing
- In a small bowl, combine the mayonnaise, seasoning packet, fresh dill, and fresh parsley.
- Mix until fully combined. Taste and adjust seasoning, if necessary.

3. Combine Salad Ingredients
- In a large bowl, combine the cooked Mafalda noodles, dill pickles, red onion, salami strips, arugula, chickpeas, grilled chicken slices, and steak slices.
- Drizzle the herbed dressing over the top.
- Toss gently to ensure all ingredients are evenly coated with the dressing.

4. Final Assembly
- Transfer to a serving platter or large dish.
- Garnish with additional fresh dill and parsley, if desired.

5. Serve and Enjoy
- Serve immediately or cover and refrigerate for up to 2 hours to let flavors meld.
