Mango Delight: Chilled Mango Coconut Snack
Ingredients
- 2 ripe mangoes
- 1 cup sweetened coconut milk
- 2 tablespoons honey
- 1 teaspoon lime juice
- 1/4 teaspoon vanilla extract
- 1/2 cup shredded sweetened coconut
- 1/4 cup crushed pistachios (optional)
Instructions
1. Prepare the Mangoes:
Begin by peeling and dicing the mangoes. Use a sharp knife to slice small cubes for easy blending and serving.
2. Blend the Base:
In a blender, combine the diced mangoes, sweetened coconut milk, honey, lime juice, and vanilla extract. Blend until smooth, ensuring all ingredients are fully incorporated.
3. Chill the Mixture:
Transfer the mango and coconut mixture into a bowl and refrigerate for at least PT1H (1 hour) to allow the flavors to meld together and the mixture to cool.
4. Prepare the Garnish:
While the mixture is chilling, toast the shredded coconut. Place the coconut in a dry skillet over medium heat. Stir occasionally for about PT5M (5 minutes) until the coconut is golden brown and fragrant. Set aside to cool.
5. Assemble the Snack:
