Mango Tiramisu and Pumpkin Cheesecake Icebox Pie



Ingredients



Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup packed light brown sugar
- 1/2 cup unsalted butter, melted

Pie Filling:
- 8 oz cream cheese, softened
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream, whipped to soft peaks
- 8 oz mascarpone cheese
- 2 ripe mangoes, peeled and sliced

Tiramisu Layer:
- 1/2 cup strong brewed coffee, cooled
- 1 tbsp coffee liqueur (optional)
- 24 ladyfinger cookies

Toppings:
- 1 cup whipped cream
- Sliced fruits (strawberries, kiwis)
- Assorted charcuterie items for garnish (such as candied nuts or dried fruit)

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F.

2. Prepare the Crust:
- In a medium bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix until the crumbs are moistened.
- Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust.
- Bake in the preheated oven for 10 minutes. Remove and allow to cool completely.

3. Make the Pumpkin Cheesecake Mixture:
- In a large mixing bowl, beat the cream cheese and pumpkin puree together until smooth and creamy.
- Add the granulated sugar and vanilla extract, and continue to mix until fully incorporated.
- Fold in the whipped cream gently, followed by half of the mascarpone cheese.

4. Prepare the Tiramisu Layer:
- Mix the cooled coffee with the coffee liqueur, if using.
- Quickly dip each ladyfinger into the coffee mixture and arrange a single layer over the cooled crust in the pan.

5. Assemble the Pie:
- Spread half of the pumpkin cheesecake mixture over the ladyfinger layer.
- Arrange a layer of mango slices over the cheesecake mixture.
- Repeat the process with another layer of coffee-dipped ladyfingers, followed by the remaining pumpkin cheesecake mixture, and top with a final layer of mango slices.

6. Chill the Pie:
- Cover the pie with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight, to allow it to set.

7. Final Touches:
- Remove the pie from the refrigerator. Run a knife around the edge before releasing the springform pan.
- Top with whipped cream, assorted fruits, and charcuterie items as garnishes just before serving.
