Maple-Dijon Glazed Smoked Salmon on the Green Egg



Ingredients



- 4 salmon filets (about 6 oz each)
- 2 tablespoons kosher salt
- 2 tablespoons brown sugar
- 1 teaspoon black pepper
- 3 tablespoons Dijon mustard
- 3 tablespoons butter, melted
- 2 tablespoons fresh dill, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 cup maple syrup

Instructions



1. Prepare the Brine:
- In a small bowl, mix together kosher salt, brown sugar, and black pepper.

2. Brine the Salmon:
- Rinse the salmon filets under cold water and pat them dry with paper towels.
- Coat each filet evenly with the brine mixture, cover them with plastic wrap, and refrigerate for 1 hour.

3. Preheat the Green Egg:
- Set up the Green Egg for indirect cooking. Adjust it to maintain a steady temperature of 250°F (about 121°C).

4. Prepare the Glaze:
- In a separate bowl, whisk together the Dijon mustard, melted butter, chopped dill, smoked paprika, salt, and maple syrup until smooth.

5. Rinse and Dry the Salmon:
- Once brined, rinse the salt and sugar off the salmon under cold water and pat them dry again.

6. Apply the Glaze:
- Brush a generous layer of the maple-Dijon glaze over each filet.

7. Smoke the Salmon:
- Place the salmon filets on the Green Egg’s cooking grid, skin side down.
- Close the lid and smoke for approximately 1 hour or until the internal temperature reaches 145°F (about 63°C) and the fish is flaky.

8. Final Glaze:
- Brush the salmon with any remaining glaze during the last 10 minutes of smoking.

9. Serve:
- Carefully remove the smoked salmon filets from the grill using a spatula. Serve warm or at room temperature, garnished with additional fresh dill if desired.
