Maple Glazed Breakfast Nut Loaf



Ingredients



Dry Ingredients:
- 1 cup cake flour
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt

Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream

Mix-ins:
- 1/2 cup chopped nuts (your choice of pecans, walnuts, or almonds)

Maple Glaze:
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar

Instructions



1. Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease a standard loaf pan (9x5 inches) with butter or non-stick spray. Line with parchment paper for easier removal.

2. Combine Dry Ingredients:
- In a medium bowl, whisk together the cake flour, all-purpose flour, cornstarch, baking powder, baking soda, and salt. Set aside.

3. Cream Butter and Sugars:
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer. This should take about 3 minutes.

4. Mix in Wet Ingredients:
- Beat the eggs into the butter mixture one at a time, ensuring each is fully incorporated.
- Add the vanilla extract and continue to mix.
- Stir in the sour cream until smooth.

5. Combine Wet and Dry Mixtures:
- Gradually add the dry ingredient mixture to the wet ingredients in batches. Mix until just combined after each addition.
- Fold in the chopped nuts gently with a spatula.

6. Bake:
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 55-65 minutes or until a toothpick inserted in the center comes out clean.

7. Prepare Maple Glaze:
- While the loaf is baking, whisk together the maple syrup and powdered sugar in a small bowl until smooth and drizzle able.

8. Cool and Glaze:
- Once baked, allow the loaf to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Drizzle the maple glaze over the cooled loaf before serving.
