Maple-Glazed Roasted Butternut Squash with Sage Aromatics
Ingredients
- 1 medium butternut squash (about 2 pounds), peeled and cubed
- 2 tablespoons maple syrup

Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Squash:
- Peel the butternut squash and remove the seeds. Cut it into 1-inch cubes and place them in a large mixing bowl.
3. Mix the Glaze:
- In a small bowl, combine the maple syrup and olive oil. Stir well to create a homogeneous mixture.
4. Combine Ingredients:
- Add the minced shallot, minced garlic, chopped sage leaves, salt, pepper, nutmeg, and cinnamon to the bowl with the butternut squash.

5. Arrange Squash on a Baking Sheet:
- Spread the seasoned butternut squash cubes in a single layer on a large baking sheet.
6. Roast the Squash:
- Place the baking sheet in the preheated oven and roast for about 25 minutes.
- After 25 minutes, gently turn the squash cubes with a spatula to ensure even cooking.
7. Finalize the Roasting:
- Continue roasting for an additional 15-20 minutes, or until the squash is tender and caramelized on the edges.
8. Serve:
- Remove the baking sheet from the oven and let the squash cool for a few minutes. Serve warm as a delightful lunch entry, either as a standalone dish or a side.
