Maple-Infused Banana Nut Breakfast Bread
Ingredients
For the Bread:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 1 cup white granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/4 cup buttermilk
- 1 teaspoon maple extract
- 1/2 cup chopped nuts (e.g., walnuts or pecans)
For the Maple Glaze:
- 1/2 cup brown sugar
- 1/4 cup (4 tablespoons) butter
- 1/4 cup milk
- 1/2 cup maple syrup
- 1/2 teaspoon maple extract
- 1 cup powdered sugar
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
2. Prepare the Dry Ingredients:
- In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
3. Mix the Wet Ingredients:
- In a large bowl, cream together the softened butter and white granulated sugar until light and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
4. Combine Ingredients and Add Flavor:
- Stir in the mashed bananas, buttermilk, and maple extract to the wet mixture until smooth.
- Gradually add the dry ingredients to the wet, mixing just until combined. Avoid overmixing.
- Fold in the chopped nuts for added texture.
5. Bake the Bread:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
6. Prepare the Maple Glaze:
- In a small saucepan over medium heat, combine the brown sugar, butter, and milk. Stir frequently until the butter has melted and the mixture is smooth.
- Add maple syrup and maple extract, bringing the mixture to a gentle boil. Remove from heat and let it cool slightly.
- Gradually whisk in the powdered sugar until you reach a thick yet pourable consistency.
7. Finish the Bread:
- Once the bread is cool, drizzle the maple glaze over the top, allowing it to ooze down the sides.
- For an added touch, sprinkle extra chopped nuts on top of the glaze (optional).
