Mediterranean Chicken Bowl with Greek Yogurt Dressing



Ingredients



- For the Chicken:
- 2 boneless, skinless chicken breasts
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste

- For the Dressing:
- 1 cup Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons freshly chopped parsley
- Salt and pepper to taste

- For the Bowl:
- 1 small red onion, thinly sliced
- 1 medium cucumber, diced
- 2 Roma tomatoes, diced
- 1/2 cup pitted Kalamata olives, halved
- 1/2 cup crumbled feta cheese

Instructions



1. Marinate the Chicken
In a bowl, combine 2 tablespoons of lemon juice, 1 tablespoon of olive oil, salt, and pepper. Add the chicken breasts and coat them evenly with the mixture. Marinate for at least PT15M (15 minutes), allowing the juices to penetrate the meat.

2. Prepare the Dressing
In a small bowl, whisk together the Greek yogurt, 2 tablespoons of lemon juice, chopped parsley, salt, and pepper until smooth and creamy. Adjust seasoning as desired.

3. Cook the Chicken
Heat a skillet over medium heat. Add the marinated chicken breasts and cook for PT6M-P10M (6-10 minutes) per side or until the internal temperature reaches 165°F and the chicken is golden brown. Remove the chicken from the skillet and let it rest for PT5M (5 minutes) before slicing into strips.

4. Assemble the Bowl
In a large bowl or individual serving plates, layer the cucumber, red onion, Roma tomatoes, olives, and feta cheese.

5. Add the Chicken
Arrange the sliced chicken breast over the salad base.

6. Drizzle with Dressing
Generously drizzle the Greek yogurt dressing over the assembled bowl. Gently toss or leave as a composed salad for a stunning presentation.
