Mediterranean Couscous Salad with Feta and Chickpeas
Ingredients
- 1 cup couscous
- 1 1/4 cups chicken broth
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup canned chickpeas, rinsed and drained
- 1/2 cup canned white beans, rinsed and drained
- 1/2 cup bell peppers, diced
- 1/2 cup cucumber, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup pine nuts, toasted
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 2 tablespoons lemon juice
- Salt to taste
Instructions
1. Prepare the Couscous:
In a medium saucepan, bring the chicken broth to a boil over medium heat. Remove from heat, add the couscous, cover, and let it stand for 5 minutes. Fluff with a fork to separate the grains.
2. Sauté Aromatics:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and continue to cook for an additional 1 minute until fragrant.
3. Mix Vegetables and Beans:
In a large mixing bowl, combine the halved cherry tomatoes, chickpeas, white beans, diced bell peppers, and cucumber.
4. Combine Ingredients:
Add the couscous, sautéed onions and garlic to the bowl with vegetables and beans. Mix in the Kalamata olives, crumbled feta cheese, and toasted pine nuts.
5. Season the Salad:
Drizzle the salad with lemon juice and add salt to taste. Sprinkle chopped basil, parsley, and mint over the salad. Toss gently to ensure all ingredients are evenly incorporated.
6. Chill and Serve:
Allow the salad to chill in the refrigerator for at least 15 minutes before serving to enhance the flavors.
