Mediterranean Pan-Fried Chicken Bowl with Tzatziki and Vegetables
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Rice:
- 1 cup long-grain rice
- 2 tablespoons butter
- 2 cups chicken broth
For the Toppings:
- 1/2 cup tzatziki sauce
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 ripe tomato, chopped
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup pitted olives, halved
Instructions
Step 1: Marinate the Chicken
1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, dill, salt, and black pepper.
2. Place chicken breasts in a shallow dish and pour the marinade over them, ensuring each piece is well-coated.
3. Cover and refrigerate for at least 1 hour to allow the flavors to infuse.
Step 2: Prepare the Rice
4. In a saucepan, melt butter over medium heat. Add the rice and stir for about 2 minutes until the grains are well-coated.
5. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes until the rice is tender and liquid is absorbed. Fluff with a fork and set aside.
Step 3: Pan-Fry the Chicken
6. Heat a large skillet over medium-high heat.
7. Remove chicken from marinade, allowing excess to drip off.
8. Add chicken to the skillet and cook for 6-7 minutes on each side or until fully cooked and golden brown. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
9. Remove from heat and let rest for 5 minutes before slicing.
Step 4: Assemble the Bowls
10. Divide cooked rice equally into four bowls.
11. Top each bowl with sliced chicken.
12. Arrange cucumber, bell peppers, tomato, red onion, crumbled feta, and olives around the chicken.
13. Add a dollop of tzatziki sauce in the center of each bowl.
