Microwave Beef and Broccoli Lo Mein Delight



Ingredients



- 1 pound beef sirloin, thinly sliced
- 2 cups broccoli florets
- 1 cup jasmine rice
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 8 oz lo mein noodles, cooked and cooled
- 1 cup carrots, julienned
- 2 cups bok choy, chopped
- 1/2 cup onions, thinly sliced

Instructions



1. Prepare the Rice:
- Place 1 cup of jasmine rice and 2 cups of water in a microwave-safe bowl. Cover with a microwave-safe lid or plastic wrap, leaving a small opening for steam to escape.
- Microwave on high for PT10M (10 minutes). Stir the rice halfway through to ensure even cooking. Let it sit for 5 minutes, then fluff with a fork.

2. Cook the Beef and Vegetables:
- In a large microwave-safe dish, combine the thinly sliced beef and minced garlic. Cover and microwave on high for PT4M (4 minutes) until the beef is partially cooked.
- Add broccoli florets, carrots, bok choy, and onions to the dish. Drizzle with soy sauce. Cover and microwave on high for PT5M (5 minutes), or until the vegetables are tender and the beef is fully cooked. Stir halfway through.

3. Combine Rice and Lo Mein:
- In a separate microwave-safe bowl, add the cooked lo mein noodles. Microwave on high for PT2M (2 minutes) to warm them.
- Add the fluffed rice and warmed lo mein noodles to the beef and vegetable mixture. Toss everything together until well combined.

4. Final Touch:
- Microwave the entire mixture on high for an additional PT3M (3 minutes) to allow flavors to meld together.
- Serve immediately while hot and garnish with additional soy sauce if desired.
