Microwave Black Bean Veggie Fiesta Bowl
Ingredients
- 1 cup black beans, canned or pre-cooked
- 1/2 medium onion, finely chopped
- 2 medium carrots, diced
- 1/2 cup corn kernels, canned or frozen
- 2 medium potatoes, peeled and diced
- 2 stalks celery, diced
- 1 medium leek, thinly sliced
- 1/2 teaspoon mixed dried herbs (such as thyme and oregano)
- 1/4 teaspoon ground spices (such as cumin and paprika)
- 1/4 cup sour cream
- 2 scallions, thinly sliced
- 2 teaspoons hot sauce
- 1 ripe avocado, diced
- 1/2 cup plain Greek yogurt
- 1/2 cup shredded cheese (cheddar or your choice)
- 1 cup tortilla chips, crushed
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Microwave-Safe Bowl
In a large microwave-safe bowl, combine the black beans, onion, carrots, corn, potatoes, celery, and leeks. Stir in the dried herbs and spices. Cover the bowl loosely with a microwave-safe lid or plastic wrap.
2. Microwave the Base Veggie Mix
Microwave on high for PT10M (10 minutes), stirring halfway through. Check the potatoes for tenderness by piercing with a fork. If needed, microwave for an additional PT2-3M (2-3 minutes) until tender.
3. Prepare the Toppings
While the veggies are cooking, in a small bowl, mix sour cream, hot sauce, and half of the sliced scallions. In another bowl, combine diced avocado with Greek yogurt and a pinch of salt for a creamy avocado topping.
4. Assemble the Fiesta Bowl
Once the vegetables are cooked and tender, remove the bowl from the microwave. Evenly sprinkle shredded cheese over the hot veggies. The residual heat should melt the cheese slightly.
5. Add Final Touches
Top with the sour cream mixture, dollops of the avocado mixture, and scatter the crushed tortilla chips around for a crunchy texture. Finish with remaining scallions and freshly chopped cilantro for a pop of color and flavor.
