Microwave Creamy Red Pepper Pasta Delight
Ingredients
- 8 oz pasta (your choice of shape)
- 1 cup roasted red peppers, drained and chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup cottage cheese
- Salt to taste
- Ground black pepper to taste
Instructions
1. Place the pasta in a large microwave-safe bowl. Add enough water to cover the pasta completely, and a pinch of salt. Microwave on high for PT10M (10 minutes) or until the pasta is al dente. Stir halfway through cooking. Depending on your microwave, additional time may be needed. Carefully drain the pasta and set aside.
2. While the pasta is cooking, in a separate microwave-safe bowl, combine the roasted red peppers, minced garlic, and red pepper flakes. Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
3. Microwave the pepper mixture on high for PT3M (3 minutes) until the ingredients are warmed and the garlic is slightly softened. Carefully remove the bowl from the microwave using oven mitts.
4. In a blender or food processor, add the warmed roasted red pepper mixture along with the cottage cheese. Blend until smooth, creating a creamy red pepper sauce. Season with salt and black pepper to taste.
5. In the large serving bowl, combine the cooked pasta and the creamy red pepper sauce. Toss well, ensuring the pasta is evenly coated.
6. Return the combined mixture to the microwave-safe bowl and microwave on high for PT2M (2 minutes) to heat everything thoroughly. Stir halfway through.
7. Allow to cool slightly before serving, ensuring all elements are perfectly heated and flavors melded.
