Ingredients
- 2 cups grilled chicken, shredded
- 1 cup charred corn
- 1 cup roasted red peppers, sliced
- 1 cup black beans, drained and rinsed

- 2 cups riced cauliflower

Instructions
1. Prepare the Riced Cauliflower:
- In a microwave-safe bowl, add 2 cups of riced cauliflower.
- Microwave on high for PT2M (2 minutes), until the cauliflower is tender. Set aside.
2. Combine Main Ingredients:
- In a large microwave-safe bowl, add the shredded grilled chicken, charred corn, roasted red peppers, and black beans.
- Mix well to ensure even distribution.
3. Heat the Main Ingredients:
- Place the bowl in the microwave and heat on high for PT3M (3 minutes) or until the mixture is thoroughly warmed.
- Stir halfway through to ensure even heating.
4. Prepare the Avocado-Lime Dressing:
- In a small bowl, combine the diced avocado, lemon juice, lime juice, and chopped cilantro.
- Mash together using a fork until smooth.
- Add the Greek yogurt and mix until well combined.
5. Assemble the Dish:
- Add the warmed cauliflower rice to individual serving bowls.
- Evenly distribute the heated chicken, corn, pepper, and black bean mixture over the cauliflower rice.
- Drizzle the avocado-lime dressing over each serving.
6. Garnish and Serve:
- Sprinkle crumbled Cotija cheese over each bowl.
- Serve with tortilla chips on the side as a crunchy accompaniment.
