Ingredients
- 2 cups rotisserie chicken, shredded
- 1 cup frozen peas, thawed
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup cooked taco meat
- 1/2 cup black beans, drained and rinsed
- 1 cup tomatoes, diced
- 4 cups tortilla chips
- 1 cup guacamole
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Optional: Dahl, as a side or topping
Instructions
1. Prepare the Base:
Arrange the tortilla chips evenly on a large, microwave-safe plate, ensuring they form a single layer whenever possible.
2. Layer the Toppings:
Distribute the rotisserie chicken, taco meat, and black beans evenly over the tortilla chips. Aim for a balanced spread to ensure every chip is garnished.
3. Add Veggies and Cheese:
Sprinkle the diced tomatoes and thawed peas over the top, followed by covering everything with the shredded cheese.
4. Microwave the Nachos:
Place the plate in the microwave and heat on high for approximately 3 to 5 minutes (PT3M to PT5M). Keep an eye on the cheese and stop microwaving once it is completely melted and bubbly.
5. Add Fresh Elements:
Carefully remove the plate from the microwave (it will be hot). Top the nachos with dollops of guacamole.
6. Garnish and Serve:
