Microwave Hawaiian Chicken Pineapple Bites
Ingredients
- 1 pound boneless, skinless chicken breast, cubed
- 1 cup pineapple chunks, drained
- 1/2 cup caramelized onions
- 1 tablespoon fresh ginger, grated
- 1/4 cup barbecue sauce
- 1/4 cup teriyaki sauce
- 1/4 cup marinara sauce
Instructions
1. Prepare the Marinade:
- In a medium-sized microwave-safe bowl, combine the barbecue sauce, teriyaki sauce, and marinara sauce. Stir well until the sauces are fully integrated.
2. Marinate the Chicken:
- Add the cubed chicken pieces to the bowl with the sauce mixture. Ensure that all chicken cubes are thoroughly coated with the sauce. Cover the bowl with a microwave-safe lid and let it sit in the refrigerator to marinate for at least PT15M (15 minutes).
3. Prepare the Additional Ingredients:
- While the chicken is marinating, prepare the other ingredients. In a separate small bowl, combine the caramelized onions and grated ginger. Set aside for later use.
4. Assemble the Dish:
- Remove the marinated chicken from the refrigerator. Add the pineapple chunks and the prepared onion-ginger mix to the bowl with the chicken. Stir well to ensure all components are evenly mixed.
5. Microwave Cooking:
- Cover the bowl with a microwave-safe lid, leaving a small gap for steam to escape. Microwave on high power for PT10M (10 minutes). Stir halfway through the cooking time to ensure even cooking and to check if the chicken is cooked through. The internal temperature of the chicken should reach at least 165°F.
6. Serving:
- Allow the dish to rest for a few minutes in the microwave before serving to let the flavors meld further. Serve warm, garnishing with a sprig of fresh herbs if desired.
