Microwave Hearty Lentil and Vegetable Bowl
Ingredients
- 1 cup dried lentils
- 2 cups water
- 2 stalks of celery, diced
- 2 medium carrots, peeled and diced
- 1 medium onion, diced
- 2 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon mixed spices (such as cumin, coriander, and paprika)
Instructions
1. Prepare the Vegetables:
- Dice the celery, carrots, and onions into small, uniform pieces for even cooking.
- Peel and dice the potatoes into small cubes.
2. Prepare the Lentils:
- Rinse the lentils under cold water until the water runs clear.
3. Combine Ingredients:
- In a large microwave-safe bowl, combine the rinsed lentils, 2 cups of water, diced celery, carrots, onion, and potatoes.
- Drizzle olive oil over the mixture and sprinkle with salt and mixed spices.
- Stir well to ensure all ingredients are evenly coated.
4. Microwave Cooking:
- Cover the bowl with a microwave-safe lid or microwave-safe plastic wrap, leaving a small gap for steam to escape.
- Microwave on high for 15 minutes, stirring halfway through (PT15M).
5. Check Doneness:
- Carefully remove the cover, being cautious of steam.
- Check that lentils and vegetables are tender. If needed, microwave in additional 2-minute increments until desired tenderness is achieved.
6. Final Touch:
