- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Vegetables:
- 2 cups broccoli florets
- 1 cup baby carrots, sliced
- 1 red bell pepper, sliced
- 1 tablespoon water
Instructions
1. Prepare the Chicken:
- Place the chicken breasts in a microwave-safe dish. Drizzle with olive oil, lemon juice, and sprinkle with lemon zest.
- Season each breast with dried thyme, garlic powder, salt, and pepper, ensuring both sides are coated evenly.
2. Microwave the Chicken:
- Cover the dish with microwave-safe plastic wrap or a silicone lid.
- Microwave on high power for 10 minutes, checking halfway through.
- Ensure the chicken reaches an internal temperature of 165°F (75°C) as the safe cooking temperature for poultry.
- Let the chicken rest, covered, for 5 minutes to allow juices to redistribute.
3. Prepare the Vegetables:
- In another microwave-safe bowl, combine the broccoli florets, sliced baby carrots, and red bell pepper.
- Add 1 tablespoon of water to help steam the vegetables.
4. Microwave the Vegetables:
- Cover the bowl with a microwave-safe lid or vented plastic wrap.
- Microwave on high for 3-4 minutes or until vegetables are tender but still crisp.
5. Serve:
- Arrange chicken breasts on a serving platter and surround with the steamed vegetables.
- Optionally garnish the dish with a few slices of fresh lemon and a sprinkle of additional thyme before serving.
