Ingredients
- 1 cup durum wheat flour
- 1 cup semolina flour
- 1/2 cup water
- 2 tablespoons refined sunflower oil
- 1 cup canned chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup cubed salami
- 1/2 cup sliced olives
- 1/2 cup Italian dressing
Instructions
1. Prepare the Pasta:
- In a large microwave-safe bowl, mix together 1 cup of durum wheat flour and 1 cup of semolina flour.
- Gradually add 1/2 cup of water and 2 tablespoons of refined sunflower oil to the flour, stirring continuously until a dough forms.
- Knead the dough for about 5 minutes until smooth, then form it into small pasta shapes or roll out and cut into strips.
- Place the prepared pasta back in the microwave-safe bowl, cover with water, and microwave on high for 10 minutes. Check at 5-minute intervals to ensure the pasta is cooked to al dente texture. Adjust time as needed.
2. Assemble the Salad:
- Allow the pasta to cool slightly by draining it and rinsing it under cold water briefly.
- In the same bowl, combine the cooked and cooled pasta, 1 cup of chickpeas, 1 cup of halved cherry tomatoes, 1 cup of cubed salami, and 1/2 cup of sliced olives.
3. Dress the Salad:
- Drizzle 1/2 cup of Italian dressing over the pasta mixture.
- Gently toss the ingredients until well combined and the dressing is evenly distributed.
4. Final Touch:
- Chill the salad in the refrigerator for at least 30 minutes before serving for optimal flavor integration.
