Microwave Mexican-Style Corn and Pepper Rice
Ingredients
- 1 cup rice
- 1 cup water
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 2 tablespoons butter
- 2 tablespoons honey butter
- 1 teaspoon salt
- 1 tablespoon salsa
- 1/4 cup pico de gallo
- 1 teaspoon Tajín seasoning
Instructions
1. Prepare the Rice:
- In a microwave-safe bowl, combine 1 cup of rice with 1 cup of water and 1 teaspoon of salt.
- Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
- Microwave on high for PT10M (10 minutes) or until the rice is tender and water is absorbed.
- Remove from the microwave and let it sit covered for another PT5M (5 minutes).
2. Prep the Vegetables and Beans:
- While the rice is resting, place the diced red and green bell peppers, and corn kernels into a microwave-safe dish.
- Add the black beans to the dish.
3. Cook the Vegetables and Beans:
- Add 2 tablespoons of butter to the vegetable and bean mix.
- Stir to combine, and microwave on high for PT3M (3 minutes) until the peppers are tender and butter is melted.
4. Combine the Ingredients:
- Fluff the cooked rice with a fork to separate the grains.
- Mix the microwaved vegetable and bean mixture into the rice thoroughly.
- Add 2 tablespoons of honey butter, 1 tablespoon of salsa, and 1 teaspoon of Tajín seasoning to the rice mixture.
- Stir well to coat all the ingredients evenly.
5. Serve and Garnish:
- Microwave the entire mixture for an additional PT2M (2 minutes) to ensure all components are warm.
- Spoon into individual serving dishes.
- Top each serving with a generous spoonful of pico de gallo before serving.
