Ingredients



- 4 medium sweet potatoes
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon freshly ground black pepper
- Optional: 1 tablespoon unsalted butter
- Optional: Salt to taste

Instructions



1. Prepare Sweet Potatoes:
- Wash the sweet potatoes thoroughly under cold water to remove any dirt.
- Poke multiple holes in each potato with a fork to allow steam to escape during cooking.

2. Microwave the Sweet Potatoes:
- Place the sweet potatoes on a microwave-safe plate.
- Microwave on high power for 10-12 minutes (PT10M-PT12M), turning them over halfway through the cooking time. Cook until the potatoes are tender and can be easily pierced with a fork.

3. Prepare the Topping:
- While the sweet potatoes are cooking, in a small bowl, mix the vanilla extract, ground nutmeg, and black pepper.

4. Finish the Dish:
- Once the sweet potatoes are cooked, carefully remove them from the microwave (they will be very hot).
- Slice the potatoes open lengthwise.
