Microwave Savory Pork with Green Onion & Ginger

Ingredients

- 1 lb pork tenderloin, sliced into thin strips
- 3 green onions, finely chopped
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon water
- 1 teaspoon sugar
- 1/4 teaspoon black pepper

Instructions

1. Prepare the Ingredients: In a medium microwave-safe bowl, combine the pork strips, green onions, and grated ginger. Set aside.

2. Mix the Sauce: In a small bowl, whisk together the soy sauce, vegetable oil, water, sugar, and black pepper until the sugar dissolves. Pour the sauce over the pork mixture, ensuring the meat is evenly coated.

3. Marinate: Allow the pork to marinate for about 5 minutes at room temperature to absorb the flavors.

4. Microwave Cooking: Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape. Microwave the pork on HIGH for 8 to 10 minutes, stirring halfway through, until the pork is cooked through and tender.

5. Check Doneness: Safely remove the bowl from the microwave (beware of steam), and check the pork for doneness. Cook for an additional minute if necessary, until pork reaches an internal temperature of 145°F.

6. Serve: Transfer the pork with its sauce to a serving dish. Garnish with additional chopped green onions if desired. Enjoy warm.
