Microwave Savory Quinoa Stuffed Bell Peppers



Ingredients



- 4 large bell peppers (any color), tops removed, seeds and membranes discarded
- 1 cup quinoa, rinsed and drained
- 1 3/4 cups vegetable broth
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (frozen or canned, drained)
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lime, juiced
- 2 tablespoons olive oil

Instructions



1. Prepare Quinoa:
In a microwave-safe bowl, combine 1 cup of quinoa and 1 3/4 cups of vegetable broth. Cover with a microwave-safe lid or plastic wrap, leaving a small corner open to vent. Microwave on high for PT10M (10 minutes) or until the liquid is absorbed and quinoa is fluffy. Let it rest for 5 minutes before fluffing with a fork.

2. Season and Mix Filling:
In a large mixing bowl, combine the cooked quinoa with black beans, corn, 1/2 cup of shredded cheese, cilantro, cumin, chili powder, garlic powder, salt, and black pepper. Squeeze lime juice and drizzle olive oil over the mixture. Stir to evenly combine all ingredients.

3. Stuff Bell Peppers:
Place the prepared bell peppers in a microwave-safe dish. Carefully fill each pepper with the quinoa mixture, pressing down slightly to compact. Top each stuffed pepper with remaining cheddar cheese.

4. Cook Stuffed Peppers:
Cover the dish loosely with microwave-safe plastic wrap or a lid. Microwave on high for PT12M (12 minutes) or until the peppers are tender and cheese is melted and bubbly.

5. Serve:
Allow the stuffed peppers to cool slightly before serving. Garnish with additional cilantro if desired.
