Microwave Shrimp Linguine Delight
Ingredients
- 12 oz linguine pasta
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup white wine
- 1/2 cup cherry tomatoes, halved
- 1/4 cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 4 cups water
Instructions
1. Prepare the Shrimp:
- In a microwave-safe bowl, combine the shrimp, olive oil, garlic, white wine, salt, and pepper.
- Cover the bowl with microwave-safe plastic wrap or a lid, leaving a small vent, and microwave on high for PT3M (3 minutes) until shrimp are pink and cooked through.
2. Cook the Pasta:
- In a large microwave-safe dish, add linguine and water.
- Make sure the pasta is fully submerged in the water.
- Cover and microwave on high for PT10M (10 minutes), stirring halfway through. Check for doneness and microwave for an additional PT2M (2 minutes) if necessary. Drain the pasta when fully cooked.
3. Combine Ingredients:
- In the same dish with the cooked pasta, add the cooked shrimp and juices, halved cherry tomatoes, grated Parmesan cheese, and chopped parsley.
- Mix well to combine all ingredients.
4. Final Touch:
- Cover the dish again and microwave on high for PT2M (2 minutes) to warm through and meld flavors.
5. Serve:
- Remove the dish from the microwave carefully (it will be hot).
- Serve immediately with extra Parmesan cheese if desired.
