Ingredients
- 4 corn tortillas
- 4 flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup cooked shredded chicken
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup salsa
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- Cooking spray
Instructions
1. Preparation: Gather all ingredients. Prepare a microwave-safe plate by lightly spraying it with cooking spray.
2. Mix Filling: In a bowl, combine the shredded chicken, black beans, cumin, chili powder, garlic powder, and salt. Stir in the salsa and chopped cilantro.
3. Layer Tortillas: Place one corn tortilla on the microwave-safe plate. Spread a thin layer of the chicken and bean mixture over the tortilla, about 2 tablespoons. Sprinkle with a mixture of cheddar and Monterey Jack cheese.
4. Alternate Layers: Cover with a flour tortilla, pressing gently to adhere. Repeat the layering process (corn tortilla, filling, cheese, flour tortilla) until all tortillas are used. Top with remaining cheese.
5. Microwave Cooking: Loosely cover the plate with a microwave-safe lid or another microwave-safe plate. Microwave on high for approximately 4-5 minutes, or until the cheese is melted and bubbly. Monitor closely to avoid overcooking.
6. Rest and Serve: Carefully remove the plate from the microwave (it will be hot!) and let the stacked tortillas rest for 1-2 minutes. Cut into wedges and serve with additional salsa or your favorite toppings.
