Microwave Vanilla Breakfast Pudding
Ingredients
- 2 cups whole milk
- 1 teaspoon real Madagascar vanilla extract
- 3 tablespoons agave nectar
- 2 tablespoons fruit pectin
Instructions
1. Prepare a Microwave-Safe Bowl:
Use a large, microwave-safe bowl to prevent overflow during cooking. Ensure the bowl is clean and completely dry.
2. Mix the Ingredients:
Pour 2 cups of whole milk into the bowl. Add 1 teaspoon of real Madagascar vanilla extract, 3 tablespoons of agave nectar, and 2 tablespoons of fruit pectin. Stir the mixture thoroughly with a whisk until the pectin is fully dissolved and incorporated.
3. Microwave the Mixture:
Place the bowl in the microwave. Set the microwave to medium power and cook the mixture for 2 minutes. Carefully remove the bowl and stir the mixture.
4. Continue Microwaving:
Return the bowl to the microwave and continue to cook in 1-minute intervals, stirring after each interval, to ensure even heating and thickening. This should take approximately 3 more minutes.
5. Check the Consistency:
The mixture should thicken to a pudding-like consistency. If it hasn't reached the desired consistency, microwave for an additional 1 minute. Stir and check again.
6. Cool the Pudding:
Once thickened, remove the bowl from the microwave and let the pudding cool for a few minutes. It will continue to thicken as it cools.
7. Serve:
Pour the pudding into serving dishes and allow to cool slightly. It can be served warm or at room temperature for a comforting breakfast treat.
