Ingredients
- 1 cup corn kernels (fresh or frozen and thawed)
- 1 poblano pepper, seeded and diced
- 1/4 cup red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup cilantro leaves, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Tortilla chips, for serving
Instructions
1. Prepare Ingredients:
Place the corn, diced poblano pepper, finely chopped red onion, and minced jalapeno pepper in a microwave-safe bowl.
2. Season the Mixture:
Add the lime juice, olive oil, ground cumin, kosher salt, and freshly ground black pepper to the bowl. Stir the mixture well to ensure even coating of the seasonings.
3. Microwave the Salsa Base:
Cover the bowl with a microwave-safe lid or plate. Microwave the mixture on high for PT3M (3 minutes). Stir halfway through to ensure even heating. After microwaving, let it sit for a minute to settle.
4. Add Fresh Ingredients:
Remove the cover and stir in the chopped cilantro leaves. Ensure that the cilantro is evenly distributed throughout the salsa.
5. Serve:
Let the salsa cool slightly. Serve with tortilla chips for dipping, and enjoy as a flavorful snack.
