One-Pan Chicken and Mushroom Dijon Delight
Ingredients
- 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces mushrooms, sliced
- 2 shallots, thinly sliced
- 3 tablespoons Dijon mustard
- 2 cups chicken broth
- 12 ounces egg noodles
- 4 ounces cream cheese, softened
- 2 tablespoons fresh parsley, chopped
- 2 cups bagged lettuce mix
- 2 cups broccoli florets
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
1. Prepare the Ingredients:
- Season the chicken pieces with salt and pepper.
- Prepare all vegetables by slicing mushrooms and shallots thinly.
2. Sauté Chicken and Vegetables:
- In a large skillet or pan, heat 1 tablespoon of olive oil over medium-high heat.

3. Create the Creamy Sauce:
- Introduce the Dijon mustard and chicken broth to the pan, stirring to combine.
- Bring the mixture to a simmer, allowing it to reduce slightly, stirring occasionally, about 3 minutes.
4. Incorporate Noodles and Cream Cheese:
- Add egg noodles directly into the skillet, ensuring they are submerged in the liquid.
- Cover and let cook, stirring occasionally, for about 10 minutes or until noodles are al dente.
- Stir in the softened cream cheese until the sauce is creamy and noodles are fully coated.
5. Combine and Serve:
- Return the cooked chicken to the pan, stirring to incorporate.
- Sprinkle with fresh parsley and adjust seasoning with salt and pepper as needed.
- Serve over a bed of bagged lettuce mix for a refreshing crunch.
