One-Pot Creamy Taco Turkey Soup
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1 tablespoon taco seasoning
- 1 tablespoon ranch seasoning
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (10 oz) fire-roasted Rotel tomatoes and chilis
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) small white beans, drained and rinsed
- 1 cup corn (frozen or canned, drained)
- 4 cups beef broth
- 1/2 cup Greek yogurt
- 4 oz cream cheese, softened
- 1/4 cup fresh cilantro, chopped
- 1 cup shredded cheese (Mexican blend preferred)
- Tortilla chips, for serving
- 1 diced avocado, for garnish
Instructions
1. Heat Olive Oil and Sauté Vegetables:
- In a large pot over medium heat, add 2 tablespoons of olive oil.
- Once hot, add the diced yellow onion and red bell pepper. Sauté for 4-5 minutes until softened.
- Add the minced garlic and continue to sauté for 1 minute until fragrant.
2. Cook the Ground Turkey:
- Add the ground turkey to the pot, breaking it up with a spoon.
- Season with kosher salt and fresh ground black pepper.
- Cook for 6-7 minutes until the turkey is browned and cooked through.
3. Season and Add Tomatoes:
- Stir in the taco seasoning and ranch seasoning, ensuring the turkey is evenly coated.
- Add the fire-roasted diced tomatoes and Rotel tomatoes and chilis. Mix well.
4. Add Beans, Corn, and Broth:
- Add the drained black beans, small white beans, and corn to the pot.
- Pour in the beef broth, stir well, and bring to a simmer.
5. Incorporate Dairy:
- Once the soup is simmering, reduce the heat to low.
- Stir in the Greek yogurt and cream cheese, ensuring they dissolve completely to make the soup creamy.
- Simmer on low for an additional 10 minutes, stirring occasionally.
6. Finish with Cilantro and Cheese:
- Remove the pot from heat and stir in the fresh cilantro.
- Add the shredded cheese, stirring until melted and smooth.
7. Serve:
- Ladle soup into bowls, topping with crushed tortilla chips and diced avocado.
- Serve hot.
