Orange-Infused Carrot and Tofu Dessert Bars



Ingredients



- 1 cup all-purpose flour
- 1/2 cup raisins
- 1/4 cup honey
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup shredded carrots
- 1/2 cup tofu, crumbled
- 1 tsp orange zest
- 1/2 tsp orange extract
- 1/2 cup shredded coconut
- 1/2 cup coconut flakes
- 1/3 cup mixed nuts, roughly chopped
- 2 tbsp mixed seeds
- 1/4 cup mixed dried fruit, chopped

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare the Baking Dish:
Line an 8x8 inch baking dish with parchment paper or lightly grease it with vegetable oil.

3. Mix Dry Ingredients:
In a large mixing bowl, combine the flour, raisins, shredded coconut, coconut flakes, mixed nuts, seeds, and dried fruit. Stir until well combined.

4. Combine Wet Ingredients:
In a separate bowl, whisk together the honey, vegetable oil, vanilla extract, orange zest, and orange extract until smooth.

5. Blend Carrots and Tofu:
Add the shredded carrots and crumbled tofu to the bowl of wet ingredients, stirring until they are fully incorporated.

6. Incorporate Dry and Wet Ingredients:
Gradually add the dry ingredients to the wet mixture. Stir until just combined, ensuring there are no dry pockets left.

7. Transfer to Baking Dish:
Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.

8. Bake:
Place the dish in the preheated oven and bake for 30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.

9. Cool and Serve:
Allow the dessert bars to cool in the dish for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before slicing into squares.
