Oven-Baked Agave Sweet Corn Puffs
Ingredients
- 1/4 cup Blue Agave Syrup
- 1 tablespoon Ethanol (to be used as a flavor extract, optional)
- 2 cups Cornmeal
- 1/2 cup Granulated Sugar Cane
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/4 cup Unsalted Butter (melted)
- 2 Eggs (beaten)
- 1/2 cup Whole Milk
Instructions
1. Preparation: Preheat your oven to 350°F (175°C).
2. Combine Dry Ingredients: In a mixing bowl, combine 2 cups of cornmeal, 1/2 cup of granulated sugar cane, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Mix until well-blended.
3. Mix Wet Ingredients: In a separate bowl, whisk together 1/4 cup of blue agave syrup, 1 tablespoon of ethanol (if using as a flavor enhancer), 1/4 cup of melted unsalted butter, 2 beaten eggs, and 1/2 cup of whole milk. Stir until fully incorporated.
4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring constantly until a smooth batter forms. Make sure there are no lumps.
5. Shape the Puffs: Using a tablespoon or small ice cream scoop, drop scoops of the batter onto a parchment-lined baking sheet, spacing them about 2 inches apart.
6. Bake: Place the baking sheet in the preheated oven and bake for about 15 minutes, or until the corn puffs are golden brown and firm to the touch.
7. Cool and Serve: Remove the corn puffs from the oven and let them cool on a wire rack for 5-10 minutes before serving.
