Oven-Baked Blueberry Breakfast Muffins
Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup milk
- 1 cup fresh blueberries
Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the desired temperature before baking.
2. Prepare the Muffin Pan: Line a 12-cup muffin pan with paper liners or lightly grease each cup to prevent sticking.
3. Creaming the Butter and Sugar: In a large mixing bowl, using a hand mixer or stand mixer, cream the softened butter and sugar together until light and fluffy (about 2-3 minutes on medium speed).
4. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then mix in the vanilla extract.
5. Mix Dry Ingredients: In a separate bowl, combine the flour, salt, and baking powder. Whisk together to evenly distribute the leavening agent and salt.
6. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the creamed butter mixture, alternating with the milk. Start and end with the flour mixture for better batter consistency. Mix gently to combine—do not overmix to avoid tough muffins.
