Oven-Baked Cheesy Chicken & Spinach Enchiladas
Ingredients
- Nonstick cooking spray
- 2 tablespoons butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups fresh spinach, chopped
- 2 cups shredded rotisserie chicken
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 8 flour tortillas (8-inch)
- 1 1/2 cups picante salsa
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 large avocado, chopped
- 1/4 cup cilantro leaves, roughly chopped
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Baking Dish:
- Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
3. Sauté the Vegetables:
- In a large skillet, melt butter over medium heat.
- Add the chopped onion and minced garlic, sautéing for 3-4 minutes until the onion is translucent and the garlic is fragrant.
4. Add Spinach & Chicken:
- Stir in the chopped spinach, cooking until wilted, about 2 minutes.
- Add the shredded rotisserie chicken, kosher salt, and freshly ground black pepper. Mix well and cook for an additional 2 minutes. Remove from heat.
5. Assemble the Enchiladas:
- Place a tortilla on a flat surface.
- Spoon 2-3 tablespoons of the chicken and spinach mixture onto the center of the tortilla.
- Roll the tortilla tightly and place it seam-side down in the prepared baking dish.
- Repeat with the remaining tortillas and filling.
6. Add Salsa & Cheese:
- Pour the picante salsa evenly over the rolled enchiladas.
- Sprinkle shredded cheddar cheese over the top.
7. Bake:
- Cover the dish with foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5 minutes or until the cheese is bubbly and slightly golden.
8. Garnish & Serve:
- Remove from the oven and let cool for 5 minutes.
- Top with dollops of sour cream, chopped avocado, and sprinkle with cilantro.
- Serve warm.
