Oven-Baked Chicken and White Bean Chili
Ingredients
- 2 tablespoons olive oil
- 1 large sweet onion, diced
- 4 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 tablespoons all-purpose flour
- 1 ½ pounds boneless, skinless chicken thighs
- 4 cups chicken stock
- 2 (15-ounce) cans Great Northern beans, drained and rinsed
- 2 (4-ounce) cans chopped mild green chiles
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ½ cup sour cream
- ¼ cup fresh cilantro leaves, roughly chopped
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Chicken:
Pat dry the chicken thighs with paper towels and season both sides with 1 teaspoon of kosher salt and ½ teaspoon of freshly ground black pepper.
3. Sauté Aromatics:
In a large oven-safe Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
4. Spice Blend:
Stir in 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of dried oregano. Cook for 1-2 minutes until the spices are toasted and aromatic.
5. Thicken with Flour:
Sprinkle in 2 tablespoons of all-purpose flour and stir continuously until the mixture is evenly coated and slightly browned, about 2 minutes.
6. Deglaze and Combine:
Gradually whisk in 4 cups of chicken stock, scraping up any browned bits from the bottom of the pot. This will create a flavorful base.
7. Add Beans and Chiles:
Stir in the Great Northern beans and chopped mild green chiles.
8. Cook the Chicken:
Nestle the chicken thighs into the bean mixture, ensuring they are mostly submerged in the liquid.
9. Bake in the Oven:
Cover the Dutch oven and transfer it to the preheated oven. Bake for about 45 minutes, or until the chicken is cooked through and tender.
10. Final Touches:
Remove from the oven and stir in ½ cup of sour cream until the mixture is creamy and well combined. Adjust seasoning to taste.
11. Serve:
Ladle the chili into bowls and garnish with a sprinkle of fresh cilantro leaves. Enjoy your dinner!
